Beyayenetu is an Ethiopian vegetarian platter, offering a sampling of diverse vegetable, lentil, and bean stews (wots). This brightly colored assortment provides a taste of several different vegan-friendly dishes at once. It is traditionally spread over a large piece of injera (sourdough flatbread) and is central to dining during Ethiopian fasting periods.
